No Sign button on the record
What to check, and how to fix it.

What to do
Check that Sign sits in the actions of the page layout. See step 5 of Add the Sign button. Also check that the user has Simple Signature (User) or Simple Signature (Admin).
If the record page uses Dynamic Actions, the page layout does not decide its buttons. Open the page in the Lightning App Builder, click the highlights panel at the top, and add Sign there.
